Recipe: The Best Red Velvet Cupcakes With Cream Cheese Frosting

This is literally the best Red Velvet Cupcake Recipe in the world! The first time I made these was for my daughter’s 1st birthday party a couple of years ago – it was a huge success… You will fall in love.

2,5 cups cake flour
1,5 cups sugar
1 tsp baking soda
1 tsp salt
1 tsp cacao powder
1,5 cups vegetable oil
1 cup buttermilk, at room temperature
2 large eggs
2 tablespoons red food colouring (you can also use beetroot juice instead of the colouring and vinegar)
1 tsp white vinegar
1 tsp vanilla extract

Cream Cheese Frosting:
450g smooth cream cheese
2 tablespoons butter
1 tsp vanilla extract
4 cups castor sugar

1. Preheat the oven to 180C. Line cupcake trays with cupcake papers
2. In a medium mixing bowl, sift together the flour, sugar, baking soda, salt and cacao powder.
3. In a large bowl, gently beat together the oil, buttermilk, eggs, food colouring, vinegar and vanilla extract with an electric mixer.
4. Add the sifted dry ingredients to the wet ingredients and mix until smooth and thoroughly combined.
5. Place in cupcake papers until about 2/3 full. Bake in the oven for about 20-22 minutes.

Cream Cheese Frosting:
Mix everything together until smooth and well blended, wait until the cupcakes have cooled down completely before frosting!
