Recipe: Marshmallow Fondant

(makes +/- 700g fondant)

5 cups mini marshmallows (preferably white)

6 cups icing sugar (plus extra for dusting)

2 tbsp water

Food colouring or flavoured extracts (optional)

DailyDish Recipe: Day 3 – Tuna Sweet Potato Jackets

I am not a huge fan of sweet potato and I have to admit I was a little bit skeptic when I read this recipe, but oh my word! Amazing combination of flavour, hubby absolutely loved it! Tip: do not touch your eyes after chopping and deseeding the chili 😦 

What You Will Need:

4 sweet potatoes

2 tins tuna in brine, drained, flaked

1 red onion, finely sliced

1 fresh chili, deseeded, finely chopped

1 lime, halved. squeezed

1 tub plain yoghurt

1/4 cup fresh coriander, roughly chopped

2 tbsp olive oil
